To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Cocktail (yields 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Directions
For the Syrup: Put the listed components into a pan, heat until it reaches a light boil, stirring so the sugar melts. After that, turn off the stove and leave to reach room temperature completely. Decant to a sealable bottle, seal and refrigerate it in the fridge, where it will keep for up to four weeks.
For the Batch Mix: Combine every liquid ingredients into one large bottle, leave to sit for an hour, then pass it through preferably using a fine cloth, so it's completely strained.
To serve: Pour 85ml of the premix into your stirring glass packed with ice, gently stirring lightly for one minute until cold. Strain to a chilled martini glass or equivalent, decorate with a few cranberries and finish by giving it a light spray of the essential oil over the drink.
